We were very fortunate to have the fab Jen O’Callaghan from Nutrition 4 Living speaking for us about nutrition at our Chakra retreat last January. Jen runs and owns a very successful Nutrition company called Nutrition4Living and is now the Nutritional Therapist at Pure Results Bootcamp, owned and operated by Kathryn Thomas.
This is one of her gorgeous super healthy and super easy to make recipes that she shared with us at The Yoga Tree’s retreat.
Ingredients:
1 carrot
½ courgette ( Put the carrot and courgette through the spiraliser )
Fresh parsley/ basil/mint leaves
Sprinkle of sesame seeds
Sprinkle of pumpkin seeds
Brussel sprouts ( Grated )
¼ chopped red/ yellow pepper
1 cup of chickpeas
Dressing:
Squeeze of 1/2 orange
Squeeze of 1/2 lemon
1 minced clove garlic #
1 tbsp. tahini
1tbsp apple cider vinegar
1 tsp grated ginger
1 tsp honey
sea salt + black pepper
Method:
Simply place all ingredients (leaving the dressing ingredients separate) into a bowl and mix.
To make the dressing combine all the dressing ingredients and drizzle over the salad.
Delicious!!
