I am absolutely addicted to this raw snack!! I came across a great raw recipe book recently called Raw Food Real World, its packed with lots of down to earth recipes that are delicious. Tadhg my son adores this snack too. Packed with nuts and all things healthy its a fab snack for all the family.
I made a big batch of these the day before Daisy was due so I could snack on something healthy that would give me lots of well needed energy!
The recipe requires a dehydrator or you could use your oven with the door open at the lowest temperature. If you are looking to get into raw food I would highly recommend purchasing a dehydrator, they are relatively cheap and well worth the investment.
I love to eat this granola directly from the fridge but its gorgeous too with nut milk poured over it and topped with some fresh blueberries and strawberries.

Ingredients:
1 apple cored and chopped
1 1/2 cups of date paste
1/2 cup maple syrup
2 tablespoons lemon juice
2 tablespoons orange zest
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
2 teaspoons sea salt
1/2 cup sunflower seeds, soaked 2 hours or more
2 cups almonds, soaked 4 hours or more
2 cups peacans, soaked 2 hours or more
2 cups pumpkin seeds, soaked 2 hours or more
1 cup cranberries (watch the sugar content of these, I try to buy the cranberries that are infused with apple juice rather than sugar)
Directions:
1. In a food processor pulse the apple, date paste, maple syrup, lemon juice, orange zest, vanilla, cinnamon, salt and 1/4 cup of sunflower seeds. Grind until completely smooth. Transfer the mixture into a large mixing bowl.
2. Add the remaining 1/4 cup of sunflower seeds, the almonds, pecans and pumpkin seeds to the food processor.( no need to rinse the bowl in between.) Coarsely chop the nuts and seeds in a few quick pulses. Add them to the bowl with the apple mixture and cranberries and combine well.
3. Spread the granola on Teflex-lined dehydrator trays and dehydrate at 115°F for 6-8 hours. Flip the granola over onto the trays and take the Teflex paper off. Continue dehydrating for another 8 -12 hours, or until the granola is crunchy. Break into pieces and once completely cool store in an airtight container. If stored in a fridge they will hold for a few weeks. Not that they would ever last that long in my house!!
