Raw Vegan Bounty Bars!!!

In my retreat back in January in Ballymaloe House one of the top favourite raw treats were my Raw Bounty Bars. Its a crazy statement to make but I am going for it…. I actually these are better than the real thing!!!! Shock horror!!!

I love them. They can be a little time consuming as you need to pop them into the freezer and if you are doing my 100% raw version dipping them in chocolate can be a little tricky. Do as I do make a batch pop them in the freezer and pull some out when your friend calls around or are needing a healthy raw treat.

The recipe is adapted from the Happy Pear, the version below uses raw chocolate rather than Dark but of course feel free to go with dark choc for a speedier version. I am a nerd I like to go full on 100% raw!!

Coconut centre:
3 Tablespoons Raw Virgin coconut Oil
4 Tablespoons of Maple Syrup/Date Paste/Honey/Raw Natural Sweetener of your choice
1 teaspoon vanilla extract
200g organic desiccated coconut(have a look at the ingredients some cheap brands have crazy yokky ingredients, choose organic and you will be safe 🙂 )
75g Ground Almonds
Small Pinch of Pink Himalayan Salt

Raw Chocolate Coating(or 85% Dark Chocolate – speedy and cheaper version):
140g raw cacao butter
45g cacao powder
4-5 teaspoon raw honey/date paste/maple adjusting to your preference
1 teaspoon vanilla extract
Pinch of Pink Himalayan salt


  1. Mix all the coconut centre ingredients together in a bowl
  2. Place parchment paper on a baking tray and spread the mixture into a square making it around 2 1/2 cm thick
  3. Pop the tray into the freezer for around 20 mins
  4. This should make it hard enough that you can cut into your desired shaped bars
  5. To make your raw chocolate. Pop cacao butter in a bowl and place over another bowl of boiling hot water.
  6. Once melted mix the cacao powder, honey, vanilla extract and salt into the cacao butter. Keep the bowl over the bowl of boiling water so as to keep it melted.
  7. Dip the bars into the raw chocolate
  8. Pop into the fridge, should be ready to consume within 5 minutes…. yum!!!!
